Bottling : april 2020, blend 2019 (including 18% red wine)

Disgorging : July 2024, so 4 years of aging in our cellars on lees

Dosage : 11.2 g/litre

Simple pleasure: earth & sea pizza, chaource, clafoutis, strawberry soup, blueberries, blackcurrant

Relaxing moment: Serrano ham or dry Bigorre ham, game in sauce

Haute couture: pigeon with poultry juice accompanied by peas and fresh truffle
