SINCE THE BEGINNING OF THE 19TH CENTURY, IN THE MOUNTAIN OF REIMS, OUR FAMILY OPERATES A VINEYARD IN JOUY-LES-REIMS, CHARMING SMALL VILLAGE CLASSIFIED PREMIER CRU.
After watching my great-grandfather, grandfather and father for a long time, I began wine and wine studies and harvested my first grapes in 1993.
In June 2006, with the help of my wife Céline, the first bottles signed «VINCENT PERSEVAL» were created.
Succeeding five generations, we take over the entire family farm in 2009, in order to continue the development of champagne sales, always integrating new techniques and technologies, while respecting the best environmental issues.
1. IN THE VINEYARDS
The vineyard covers an area of 7.50 ha and includes the 3 Champagne grape varieties: Meunier (48%), Pinot Noir (38%), Chardonnay (14%).
3 employees are needed to help us carry out all the annual wine work (pruning, tying, trimming, mowing, lifting, training).
For the harvest (manual obligatory in Champagne), we use about fifteen seasonal each year. We use 3 straddling tractors for all mechanical work (cutting, grinding of branches, amendments, tillage, treatments, trimming and stripping).
2. AT THE PRESS
Our grapes are crushed in pneumatic side membrane presses, for slow and qualitative pressing.
The vinifications are made in 316 stainless steel tanks, glossy annealed. These are thermo-regulated, in order to control the temperatures during fermentations.
The Blanc de Blancs is aged in oak barrels and barrels for several months.
3. IN THE CELLAR
Once the bottles are drawn, they are stored in the cellar, at a constant temperature, for 4 to 9 years, depending on the cuvées (as a reminder, Champagne legislation requires 15 months of aging).
After this long period of maturation of the wines, it is time to switch to stirring. This step allows the deposit of accumulated yeast, to go down into the neck of the bottle.
Then comes disgorging, which eliminates this deposit, then we add a dose of «house» liquor, before the installation of traditional cork stoppers.
A few months have passed, it is time to dress these bottles, to ship them and, finally, it is up to you to taste them!
Today, production is about 40,000 bottles per year, depending on the crop.
Our customers are mostly French, but we also ship throughout Europe.
